Ingredients
Chicken
600g bone-in lovely legs
1/4 tsp salt
1/4 tsp pepper
4 cloves garlic, minced
1 tbsp dried oregano (+ extra 1 tsp)
Juice of 2 lemons
Greek Salad
200g cherry tomatoes, chopped
1 large cucumbers, sliced
1/2 red onion, thinly sliced
1 tbsp olive oil
1 tsp white wine vinegar
1/4 cup feta cheese, crumbled
Preparation
1. Slow cook the chicken
Season chicken with salt, pepper, garlic and oregano.Place into slow cooker and pour over fresh lemon juice.
Cook on medium for 4 hours (or low for longer if needed).→ You want it tender, juicy, falling off the bone.
2. Make the salad
Combine tomato, cucumber and onion in a bowl.Whisk olive oil + vinegar and pour over.Toss through and refrigerate until ready.
3. Plate it up
Serve with:
1 chicken thigh
~1 cup Greek salad
Top with feta and a little extra oregano if you’re feeling fancy.
